The perfect pizza dough
A pizza should be delicious and crispy, and with this recipe from the pizza expert Alberto, you can make the perfect pizza dough.
You will need:
- 1,2 kg tipo 00 Italian wheat flour (add flour until the dough has the right texture)
- 25 g fresh yeast
- 700 ml water
- 3 teaspoons salt
- 1 teaspoon sugar
- A little olive oil
Dissolve the yeast in lukewarm water and add salt, sugar and olive oil
Pour the flour into a bowl
Add the water to the flour
Knead the dough thoroughly
Add a little more flour if the dough is too sticky
Let the dough rise for 1,5 hours.
Pour olive oil on the dough
Cut the dough into smaller pieces – every piece should have the shape of a large bun
Sprinkle flour on top of the buns
Let the buns rise for another 1,5 hours
Then, massage the buns so they become flat pizza bases and distriture tomato sauce evenly on the base.
Only your imagination sets the limits for the toppings you can put on top of the pizza.
Alberto’s personal favorite is Pizza Crudo, in which the pizza toppings consist of mozzarella, Parma Ham, parmesan cheese and arugula.
